Our praline pecan chocolate lollipop, La ChoupaChok, is an original creation by Basile & Téa: a chocolate confection in the shape of a lollipop, designed to be bitten into to successively discover different textures.
Beneath its chocolate coating sprinkled with roasted pecan shards lies a lightly lemon-flavored marshmallow and a pecan praline center.
An artisanal chocolate lollipop where the character of the pecan nut, the sweetness of the marshmallow, and the freshness of the lemon meet.
At the center of each ChoupaChok is our pecan praline.
Pecans are roasted before being combined with sugar cooked to caramel in a copper cauldron. The mixture is then ground while intentionally retaining some texture and crunch, and then worked with fleur de sel and Bourbon vanilla.
This method preserves a true presence of the pecan nut and gives the center of the ChoupaChok a particularly indulgent texture. You can also find this praline in our assortment of praline & ganache chocolates.
The praline center is covered with a marshmallow that we make from sugar, fresh lime and lemon juice, and zest.
We intentionally seek a light presence of lemon: it brings freshness and balances the richness of the pecan praline and chocolate without taking over the other flavors.
Our marshmallow is made with non-pork gelatin. You can also discover our chocolate-coated vanilla marshmallows.
The ChoupaChok was conceived as a different way to enjoy a chocolate confection: presented like a lollipop, but designed to be crunched.
From its shape to the combination of pecan praline, fresh lemon marshmallow, and chocolate coating, it is one of the creations that represents the expertise and universe of our artisanal chocolate shop in Pont-Évêque, in the Isère region.
