Our Discovery Box brings together five emblematic specialties of our chocolate shop: orangettes, citronettes, Swiss rochers, mendiants, and coated dragées.
Designed to discover different facets of our expertise, it combines dark and milk chocolate with selected candied fruits and nuts. Each specialty has its own recipe, texture, and balance, from the melt-in-the-mouth quality of candied citrus peels to the crunch of caramelized almonds and hazelnuts.
Our chocolates are handcrafted in our workshop in Pont-Évêque, in the Isère region.
Our orangettes and citronettes are made from candied citrus peels by Maison Corsiglia, selected for their light candying.
In our workshop, the bark pieces are cut by hand, then coated in 100 % cocoa before being covered in 70 % dark chocolate. This step enhances the chocolate’s intensity and adds a more pronounced bitterness to balance the sweetness on the palate.
Candied orange peels develop an intense orange flavor, without excessive bitterness from the fruit, while candied lemon peels offer a delicately citrusy flavor, without acidity. The coating provides a contrast between a melt-in-your-mouth peel and crunchy chocolate.

Swiss rocks are made from almond sticks caramelized in a copper cauldron, then combined with chocolate.
The Discovery Set includes two recipes: the dark chocolate Swiss rocher 72 %, served with candied orange, and the milk chocolate Swiss rocher 39 %, served with candied lemon.
The result plays on the contrast between the crunchiness of the caramelized almonds, the melt-in-your-mouth texture of the chocolate, and the fruity notes of the candied citrus fruits.

Our mendiants are made on a thin chocolate base and garnished with dried fruits and candied citrus.
The 72 % dark chocolate version combines Iranian pistachios, candied orange, Valencia almonds, and French hazelnuts caramelized in a cauldron.
The milk chocolate version 39 % combines Iranian pistachios, candied lemon, Valencia almonds, and French hazelnuts caramelized in a cauldron.

The Discovery Gift Set is rounded out by two chocolate-covered confectionery recipes: Valencia almonds coated in 72 % dark chocolate and French hazelnuts coated in 39 % milk chocolate.
