Our Discovery Box brings together five emblematic specialties of our chocolate shop: orangettes, citronettes, Swiss rochers, mendiants, and coated drag\u00e9es.<\/p>\n
Designed to discover different facets of our expertise, it combines dark and milk chocolate with selected candied fruits and nuts. Each specialty has its own recipe, texture, and balance, from the melt-in-the-mouth quality of candied citrus peels to the crunch of caramelized almonds and hazelnuts.<\/p>\n
Our chocolates are handcrafted in our workshop in Pont-\u00c9v\u00eaque, in the Is\u00e8re region.<\/p>\n
Our orangettes and citronettes are made from candied citrus peels by Maison Corsiglia, selected for their light candying.<\/p>\n
In our workshop, the bark pieces are cut by hand, then coated in 100 % cocoa before being covered in 70 % dark chocolate. This step enhances the chocolate\u2019s intensity and adds a more pronounced bitterness to balance the sweetness on the palate.<\/p>\n
Candied orange peels develop an intense orange flavor, without excessive bitterness from the fruit, while candied lemon peels offer a delicately citrusy flavor, without acidity. The coating provides a contrast between a melt-in-your-mouth peel and crunchy chocolate.<\/p>\n
